Upside down cake with caramelized apples

A four-quarter base with the delicacy of caramelized apples.

In cake version or in cake format, this recipe can be declined with the fruits you like!

As we are in winter, I favored a seasonal fruit: the apple!


Choose firm and slightly sweet and tart apples that will bring good flavors to this recipe.

Ingredients


For the caramelized apples :

  • 5 apples

  • 100g margarine

  • 100g of sugar


For the cake batter :

  • 250g natural vegetable yoghurt

  • 150g of sugar

  • 1/2 lemon juice

  • 250g of flour

  • 10g baking powder

  • 150g melted margarine

  • A pinch of salt

  • Spices: cinnamon, cardamom (optional)


Method


Prepare the caramelized apples :

  1. Peel and cut the apples into 8.

  2. In a skillet, melt the margarine with the sugar until you get a nice golden caramel.

  3. Add the cut apples and leave to confit for 5-10 minutes until the apples are still slightly crunchy.


For the cake batter :

  1. In a bowl, mix the vegan yogurt and the sugar.

  2. Add lemon juice, salt, baking powder, flour and melted margarine. Mix until you get a homogeneous cake batter that makes a nice ribbon.

  3. In a cake pan, place the candied apples at the bottom and cover with the cake batter.

  4. Bake for 1 hour at 180°C.

  5. Check for doneness of the cake by pricking with the tip of a knife. It should come out dry.


When the cake is baked, let it cool before turning it over.

Enjoy it when it is still lukewarm accompanied by a vegetable vanilla cream, whipped cream or a scoop of vegetable vanilla ice cream.
