A four-quarter base with the delicacy of caramelized apples.
In cake version or in cake format, this recipe can be declined with the fruits you like!
As we are in winter, I favored a seasonal fruit: the apple!
Choose firm and slightly sweet and tart apples that will bring good flavors to this recipe.

Upside down cake with caramelized apples
Ingredients
For the caramelized apples :
5 apples
100g margarine
100g of sugar
For the cake batter :
250g natural vegetable yoghurt
150g of sugar
1/2 lemon juice
250g of flour
10g baking powder
150g melted margarine
A pinch of salt
Spices: cinnamon, cardamom (optional)
Method
Prepare the caramelized apples :
Peel and cut the apples into 8.
In a skillet, melt the margarine with the sugar until you get a nice golden caramel.
Add the cut apples and leave to confit for 5-10 minutes until the apples are still slightly crunchy.
For the cake batter :
In a bowl, mix the vegan yogurt and the sugar.
Add lemon juice, salt, baking powder, flour and melted margarine. Mix until you get a homogeneous cake batter that makes a nice ribbon.
In a cake pan, place the candied apples at the bottom and cover with the cake batter.
Bake for 1 hour at 180°C.
Check for doneness of the cake by pricking with the tip of a knife. It should come out dry.
When the cake is baked, let it cool before turning it over.
Enjoy it when it is still lukewarm accompanied by a vegetable vanilla cream, whipped cream or a scoop of vegetable vanilla ice cream.
